How to Make Chocolate

You will need:
- 240g plain flour,
- 65g sugar,
- 3tsp baking powder,
- 1/2tsp cinnamon,
- 240ml milk,
- 60ml vegetable oil,
- 1/2tsp vanilla extract,
- 1 egg,
- 110g chocolate chips,
- and 75g chopped walnuts.
If you have ever wondered how to make chocolate chip muffins then really it is one of the simplest recipes that there is. You simply put all of the ingredients into a bowl together and mix them until combined making sure that none of the ingredients have clumped together, you need to take care not to overwork the mixture or the muffins won’t be as light and fluffy as they might otherwise.
Heat the oven to 200C, the ideal way how to make chocolate muffins is to use a muffin pan, in order to get the depth, but if you do not have one or are unable to get one you can place the muffin cases into a normal fairy cake tray. They should only take about 20 minutes, you can check if they are done by inserting a skewer in to the centre of one of them, if the skewer comes out clean then they are ready. If not, return them to the oven for a few minutes and then retest. Once cooked remove them from the tray and place them on a wire rack to cool.
Chocolate chip muffins are usually made with a plain muffin mix with chocolate chips incorporated into the mix. But how to make chocolate muffins? You could just add cocoa powder to the mix while you are preparing it, although a better way is to use some molten chocolate, this gives a much more rich, deep chocolate flavour. Ideally use chocolate with a high cocoa content, around 70% is ideal. You will need to melt the chocolate first, this can do be done in two different ways, either put it into the microwave and melt it that way, keeping an eye on it so it doesn’t burn. Because of this risk of burning it is preferable to use a Bain-Marie, this is simply a bowl suspended a pan of simmering water, this melts the chocolate slowly and if you ensure the bottom of the bowl does not touch the water then the chocolate will not burn. This melted chocolate can then be mixed into the muffin mix once you have combined all of the other ingredients. Add more flour if you think the mixture is too loose, remembering not to overwork the mixture.
